Ingredients
- 1½ cups white flour
- 1½ cups whole wheat flour
- 1 teaspoon salt
- 1 teaspoon soda
- ¼ teaspoon baking powder
- 1 tablespoon cinnamon
- 3 eggs
- 1½ cups brown sugar
- 1 cup vegetable oil
- 2½ cups grated zucchini
- 1 teaspoon vanilla
- 1 teaspoon almond extract
- 1 cup raisins
- 1 cup chopped walnuts
Method
- Preheat the oven to 350 F.
- Sift together the flours, salt, soda, baking powder, and cinnamon; set aside.
- In a mixer with a large bowl, mix together the eggs, brown star, and oil.
- Add the grated zucchini to the wet ingredients, mix well.
- Add the dry ingredients by spoonfuls to the wet ingredients mixing after each addition.
- Add the flavoring extracts, nuts and raisins, mix well.
- Divide the batter evenly into two well greased 3 inch × 3 inch × 9 inch baking pans.
- Bake for 1 hour, or until a cake tester inserted into the center of the pan comes out clean. Watch near the end of the cooking time to make sure it does not burn.
- This bread freezes well.
