Zucchini Bread

Ingredients

  • 1½ cups white flour
  • 1½ cups whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • ¼ teaspoon baking powder
  • 1 tablespoon cinnamon
  • 3 eggs
  • 1½ cups brown sugar
  • 1 cup vegetable oil
  • 2½ cups grated zucchini
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 1 cup raisins
  • 1 cup chopped walnuts

Method

  1. Preheat the oven to 350 F.
  2. Sift together the flours, salt, soda, baking powder, and cinnamon; set aside.
  3. In a mixer with a large bowl, mix together the eggs, brown star, and oil.
  4. Add the grated zucchini to the wet ingredients, mix well.
  5. Add the dry ingredients by spoonfuls to the wet ingredients mixing after each addition.
  6. Add the flavoring extracts, nuts and raisins, mix well.
  7. Divide the batter evenly into two well greased 3 inch × 3 inch × 9 inch baking pans.
  8. Bake for 1 hour, or until a cake tester inserted into the center of the pan comes out clean.  Watch near the end of the cooking time to make sure it does not burn.
  9. This bread freezes well.
