Ingredients
- 1 large red pepper
- 1 large yellow pepper
- ½ bunch of celery
- 1 medium or ½ large white onion
- 1 cup of chopped grape tomatoes
- 2 lbs of shrimp
- ½ cup of fresh cilantro
- 1 cup of lime juice
- 1 bottle of Ken’s Italian dressing
Method
- Chop all the ingredients except shrimp
- Cut shrimp into bite sized pieces
- Mix dressing and lime juice together and pour over mixture of tomatoes, celery, peppers, onions, and shrimp.
- Refrigerate overnight
- Before serving drain off dressing, add chopped cilantro and serve with Scoops
