Grace’s Apple Squares

Ingredients

Crust:
  • 2½ Cups flour
  • Dash of salt
  • 1 teaspoon baking powder
  • 1 heaping Tablespoon granulated sugar
  • 1 cup vegetable shortening
  • 2 Egg yolks
  • Approximately ½ Cups milk
Filling:
  • 1½ Cups flaked cereal (Wheaties or Corn Flakes)
  • 1 Cup granulated sugar
  • 1 teaspoon cinnamon
  • ¼ Cup butter (optional)
  • Pare, core and slice 8-12 apples, as for pie
Glaze:
  • 1 Cup powdered sugar
  • 1 teaspoon vanilla
  • 2-3 Tablespoons milk

Method

Mix crust ingredients like any pie crust.  Add 2 beaten egg yolks and enough milk to make 2/3 cup.  Mix well.  If too moist, add a little more flour.  Divide dough in half.  Roll out each half to fit 9×15 pan.

Place bottom crust in pan.  Sprinkle with cereal flakes.  Layer apple slices over the cereal flakes.  Mix cinnamon and sugar and sprinkle over the apples.  Dot with butter.  Put on top crust and pinch edges to seal.  Slit top crust and brush lightly with milk, as for any pie.

Bake 10 minutes at 425F, then 40 minutes at 350F.

Let cool 15 minutes

Mix powdered sugar, vanilla, and enough milk to make a glaze about the consistency of half and half.
