Ingredients
- 1½ pound ground beef
- 1 cup chopped onion
- 1 can (12 ounces) whole kernel corn
- 1 can cream of mushroom soup
- 1 can cream if chicken soup
- 1 cup sour cream
- ¼ cup chopped pimento (2 ounce jar)
- ¾ teaspoon salt
- 3 cups dried egg noodles
- 1 cup buttered bread crumbs
Method
- Cook egg noodles according to package directions and drain
- Brown ground beef and add onion and cook until translucent
- Mix egg noodles, meat mixture and all other ingredients except buttered bread crumbs.
- Place mixture into a 2 quart casserole dish; top with buttered bread crumbs.
- Bake at 350F for 30 minutes
Notes
Aunt Bea sometimes makes this in a crock pot for potluck dinners, and extends it with a few more noodles, or a little more onion, or some additional ground beef, or some more pimentos. Experiment for your next potluck depending on the size of the crowd.
