Aunt Bea’s Casserole for a Crowd

Ingredients

  • 1½ pound ground beef
  • 1 cup chopped onion
  • 1 can (12 ounces) whole kernel corn
  • 1 can cream of mushroom soup
  • 1 can cream if chicken soup
  • 1 cup sour cream
  • ¼ cup chopped pimento (2 ounce jar)
  • ¾ teaspoon salt
  • 3 cups dried egg noodles
  • 1 cup buttered bread crumbs

Method

  1. Cook egg noodles according to package directions and drain
  2. Brown ground beef and add onion and cook until translucent
  3. Mix egg noodles, meat mixture and all other ingredients except buttered bread crumbs.
  4. Place mixture into a 2 quart casserole dish; top with buttered bread crumbs.
  5. Bake at 350F for 30 minutes

Notes

Aunt Bea sometimes makes this in a crock pot for potluck dinners, and extends it with a few more noodles, or a little more onion, or some additional ground beef, or some more pimentos.  Experiment for your next potluck depending on the size of the crowd.
